Blackberry Ginger Coconut Butter Cups
Prep Time: 20 Mins | Serves up to 10 hungry bellies
What you will need:
- ⅓ cup + 2 tbsp coconut butter (also known as pure creamed coconut)
- 6 tbsp coconut oil
- ¼ cup fine shredded unsweetened coconut
- 2 tbsp honey
- 1.5 tbsp chia seeds
- 1 tsp grated fresh ginger
- 2 tbsp diced candied ginger
- ½ cup halved fresh blackberries
Simple Steps:
- Take your blackberries and put it in a separate bowl.
- Add and mix all dry and wet ingredients separately into a bowl and combine.
- Cook your berries in sugar to take out the tartness of the fruit.
- Add and fold-in blackberries carefully into your batter.
- Using a spoon, evenly distribute mixture into 10 separate silicone cupcake liners in a muffin pan.
- Freeze until solid, about 10 minutes. Store in fridge.
