If you happen to mark this weekend unwinding in the park or having a quiet picnic somewhere romantic, you might want to try getting your hands busy with this delectable scrumptious treat.

Blackberry Ginger Coconut Butter Cups


Prep Time: 20 Mins | Serves up to 10 hungry bellies


What you will need:

  • ⅓ cup + 2 tbsp coconut butter (also known as pure creamed coconut)
  • 6 tbsp coconut oil
  • ¼ cup fine shredded unsweetened coconut
  • 2 tbsp honey
  • 1.5 tbsp chia seeds
  • 1 tsp grated fresh ginger
  • 2 tbsp diced candied ginger
  • ½ cup halved fresh blackberries

Simple Steps:


  1. Take your blackberries and put it in a separate bowl.
  2. Add and mix all dry and wet ingredients separately into a bowl and combine.
  3. Cook your berries in sugar to take out the tartness of the fruit.
  4. Add and fold-in blackberries carefully into your batter.
  5. Using a spoon, evenly distribute mixture into 10 separate silicone cupcake liners in a muffin pan.
  6. Freeze until solid, about 10 minutes. Store in fridge.
